Gluten Free Doughnut Recipe

It seems like lately I have been posting a whole lot of Gluten Free Recipes and gluten free content in general. I am aware that those kind of things aren’t necessarily applicable to everyone. So rest assured there is other, more varied content coming. It’s just with quarantine and juggling dissertation work- in my spare time I have been baking a lot. I suppose, to combat the fact that I can hardly step outside my front doorstep. Initially I wanted to try this recipe out, as I was reminiscing back to my favourite sweet treat as a child- Pink Fingers. I couldn’t actually find a recipe for Gluten Free Pink Fingers unfortunately, so using a Doughnut mix I thought I could make my own. Gluten free Doughnuts may be gluten free but remember they’re still Doughnuts and doughnuts are for everyone. Without further ado, heres how to make Gluten Free Doughnuts or Gluten Free Pink Fingers- whichever you prefer.

Gluten Free Doughnut Recipe

I used a recipe over at Freefromheaven as a guide but ended up changing it slightly. Simplifying it a tad.

What you’ll need

  • 150 g gluten-free self-raising flour
  • ¼ tsp gluten-free baking powder
  • 110 g caster sugar
  • 120 ml almond milk
  • 2 eggs
  • 1½ tbsp of Vegetable oil
  • Doughnut mould or any individual moulds really. (Personally I used a silicone tray of mini Bundt moulds and some miniature loaf tins)

For the Icing

  • 100g Icing Sugar
  • An Assortment of Sprinkles
  • 2tsp of water

Method

  • Preheat the oven to 180 Degrees Celsius
  • Put the butter, sugar and eggs into a large bowl and whisk until fully incorporated. (I use a stand mixer for convenience)
  • Add the milk and oil and whisk until combined.
  • In a separate bowl combine the dry ingredients and add to the wet mixture a little at a time. Whisking in between. This should avoid any lumps forming.
  • Pour batter into your moulds, filling them about 3/4 of the way.
  • Bake in the oven for about 10-12 minutes. They should be soft to the touch. Leave to cool before decorating
  • When cool, you can take the liberty to decorate your doughnuts and pink fingers however you’d like. I stuck to the simple icing and sprinkles for that classic look.

  1. They look delicious! I like your blog mentioning gluted free ingredients and recipes. My daughter has coeliacs disease and I’m always looking out for recipes that appeal to both herself and the family. I don’t cook separate meals, I just make them gluten free. Keep on posting!
